At this year's Thanksgiving, rather than just saying what you're thankful for, show appreciation for the earth by providing your guests with an eco-friendly celebration of gratitude. ::Toasty Thanksgiving :: As the crisp fall days are slipping by, making way for winter, memories of long summer days continue to keep us warm. Bamboo is another way to provide warmth to any room. ADD BAMBOO TO YOUR FEAST! Stir-Fried Beef with Young Bamboo Shoot - 1 lb. of lean beef steak, sliced and marinated with 1 teaspoon of sugar, 1 tablespoon of fish sauce and 1 teaspoon of finely chopped garlic.
- 2 tablespoons of fish sauce
- 1 lb. of young bamboo shoot, sliced and boiled (see above)
- 4 tablespoons of oil
- 2 tablespoons of chopped spring onion and coriander
- 2 tablespoons of oyster sauce (optional)
Heat a large pot until it is very hot. Stir-fry the oil and beef. Cook for about 7 minutes. Add bamboo slices and continue to stir-fry for another three minutes. Add fish sauce and oyster sauce and cook for 2 minutes. Sprinkle with spring onion and coriander. Serve immediately. This dish also goes well with steamed rice or pasta.
